Radishes are in season, and if you love them as much as I do, you already have some of this spicy and peculiar little root in your fridge. DON’T THROW AWAY THEIR GREENS! Recipe alert!
Ingredients: 1 bunch radish greens (really well cleaned – I soak my radish bunch in white vinegar and water for at least 15mins and then rinse like crazy), 1 leek (only the whites), 1 bunch kale leaves, 4 whole garlic cloves, coconut oil, Olive oil, or Earth’s Best, red pepper flakes, salt & pepper.
How to: Heat up a generous tablespoon of oil (I blended Earth’s Best and Olive oil), add garlic cloves to the pan and let it heat up until bubbling. Add red pepper flakes (I like a little kick so I did about 1/2 tsp), and add the leeks which are cut into fine strips. Let that cook for a two mins stirring, then add the radish greens roughly chopped. Lastly add the kale and salt/pepper to taste. Cook until leek is translucent and kale has softened but remains bright green (about 5 mins). With the back of your wooden spoon mash the garlic cloves against the side of the pan and mix well into the greens.
