Husband-approved Cucumber Snacks

These are a great mid-morning snack, packed with protein, healthy fats, and fiber; plus all the cooling benefits of cucumber. You’ll need:
1/4 English Cucumber
1/2 small ripe avocado
1 hard-boiled egg
1/2 tsp Taco Seasoning How to:

Cut cucumber into thin rounds and arrange on a plate.

In a small bowl place the peeled egg and mash with a fork. Add the avocado and mash together some more…then add the taco seasoning and blend (you can add more seasoning if desired).

Spoon small amounts of the mix onto the cucumber rounds, and feast!
My hubby loved them and so will yours! Great for appetizers or party snacks.
